BREWERIES
Hiraizumi Honpo
Nestled in the serene landscapes of Nikaho City, between Mount Chōkai and the Sea of Japan, Hiraizumi Honpo Brewery has been crafting exceptional sake since 1487. As Japan’s second-oldest brewery, its legacy spans over five centuries of resilience, artistry, and innovation.
The yamahai style, a hallmark of Hiraizumi, uses the natural fermentation of lactic acid to develop sake with extraordinary depth and complexity. The brewery’s cold winters provide the perfect conditions for this time-honored technique, resulting in a flavor profile that is bold, nuanced, and unmistakably traditional.
Takagi Shonzu
Takagi Shuzo has been crafting remarkable sake since 1884 in Akaoka, Kochi Prefecture, a vibrant merchant town steeped in history. Over the decades, the brewery has faced numerous challenges, but its commitment to quality and perseverance has carried it through by honoring and becoming a cultural pillar of the local community. One of their most iconic cultural contributions became a staple of the lively Dorome Festival in Akaoka, where oversized cups of the brewery’s sake take center stage in spirited drinking contests, bringing people together in celebration.

Every bottle of BŌKEN is a masterpiece, crafted by artisans who pour their passion and expertise into every step of the process. Using pristine local water, regionally cultivated rice, and rare yeast strains, our sakes deliver bold, umami-rich flavors that captivate the palate. Each sip embodies the spirit of exceptional craftsmanship, reimagined for the modern connoisseur.
